 Peri-Peri Spicy Rice

1 tbsp extra virgin olive oil

1 small red onion, peeled & sliced

2 garlic cloves, crushed

2 small capsicums, different colours, deseeded & chopped

1 medium tomato, roughly chopped

1 - 2 red chillis, deseeded & chopped

2 tbsp tomato paste

1½ cups long grain rice

500ml chicken or vegetable stock

300g tin Heinz Beanz® Peri- Peri Flavour

Salt and pepper, to taste

Heat the oil in a large frying pan on medium heat. Add the onion and garlic. Cook for 5 minutes, until the onions are soft and lightly browned.
Add the sliced capsicum and chilli and cook for a further 2-3 minutes. Stir in the tomatoes, tomato paste, then the rice. Add 2 cups of the stock, cover the pan and cook for around 6-8 minutes, or until the rice is tender.
Stir in the Heinz Beanz Peri-Peri Flavour, then season to taste. Serve with lemon wedges and freshly chopped parsley or coriander.
