Burritos are always a popular item on the family menu, as they get the thumbs-up from every family member everytime. I love the fact they’re quick and easy to prepare and are a healthy meal the entire family enjoys.

1 tbsp oil

1 onion, chopped

1 clove garlic, finely chopped

400g chicken thigh fillets, cut into strips

2 x 300g cans HEINZ Baked Beans in Tomato Sauce

400g can chopped tomatoes

2 tbsp sweet chilli sauce

Freshly ground pepper & salt, to taste

8 flour tortillas, warmed in microwave oven for 20 sec.

1 cup grated tasty cheese

2 cups shredded iceburg lettuce leaves, for serving

1 cup chopped tomato

8 tsp light sour cream

Guacamole, optional

METHOD
1.
Heat oil in a non-stick fry-pan and cook onion and garlic for 2 minutes or until soft. Add chicken and cook for 2-3 minutes until browned.

Add the HEINZ Baked Beans in Tomato Sauce, canned tomatoes and sweet chilli sauce and cook for 3 minutes. Season with freshly ground pepper and salt then remove from heat.

Assemble burritos; sprinkle a little cheese along the centre of a warmed tortilla and top with a few spoonfuls of chicken mixture. Roll to enclose filling. Repeat using remaining tortillas arranging each burrito along side the other in a large ceramic baking dish. Spoon remaining mixture in a line across the centre of the burirtos and sprinkle with remaining cheese. Bake in a preheated oven of 180ËšC for 15-20 minutes or until cheese is golden.

To serve; place a burrito on each serving plate and top with lettuce, tomato, a dollop of sour cream and guacamole if using.
