Creamy Potato Bacon Pea Salad
Ingredients

1kg baby potatoes, boiled or roasted

150g Diced bacon or pancetta

½ cup Chopped parsley

½ cup Chopped chives
-
½ cup Sliced spring onions and/or thinly sliced red onion

1 cup Heinz [Seriously] Good Whole Egg Mayonnaise

1 squeeze lemon juice

Salt & freshly ground black pepper
Method

Step 1
Cook the bacon or pancetta in a non-stick frying pan, stirring frequently for 5 minutes or until cooked through and crispy. Place on a paper towel to absorb excess oil and allow to cool.

Step 2
When the potatoes are cool, cut in half and place into a large bowl. Add the pancetta/bacon, parsley, chives, onions, Heinz [Seriously] Good Whole Egg Mayonnaise and lemon juice and stir to gently combine.

Step 3
Season with salt and pepper and enjoy! Great with grilled meats or Halloumi Cheese.
