Prosciutto
Prosciutto is an Italian ham that’s salt-cured and air-dried, so doesn’t require cooking. The true Italian variety, referred to as Parma ham, comes from the northern Italian province of Parma, the same area famous for Parmesan cheese. Prosciutto is available from delicatessens, including supermarket deli’s, and is sold by weight in paper thin slices. Use slices within a week, or store wrapped tightly in the refrigerator to prevent drying out. Serve prosciutto with antipasto platters, in a salad combining tomato, basil & fresh mozzarella, as a last minute addition to pizza, or tossed through pasta.
