Cheesy Corn FrittersThese fritters make a wonderful dish to serve as a light lunch or brunch and are especially good if you make them as smaller fritters to pass around with drinks.

Ingredients¾ cup SR flour ½ cup milk 2 eggs 20g butter, melted 410g can GOLDEN CIRCLE Corn Kernels, drained ½ cup grated cheddar cheese ¼ cup grated parmesan 2 tbsp chopped chives 2 tsp olive oil guacamole, sour cream and coriander, for serving
Directions1. Place flour into a large bowl. Whisk together the milk, eggs and butter. Stir into flour until batter is smooth.
2. Add the GOLDEN CIRCLE corn, both cheeses and chives. Season well and mix.
3. Heat oil in a large non-stick frying pan over medium heat. Add spoonfuls of mixture to pan and cook for 2 minutes each side until golden. Drain on paper towel. Serve warm topped with guacamole, sour cream and coriander.
