Capers
Capers are the eatable flower buds of the Caper Bush; a Mediterranean perennial shrub. When these buds are left to flower, they produce eatable seed bearing fruit know as caper berries. When it comes to buying capers, the smaller the better. They're sold pickled in vinegar, brine or loosely packed in salt, which gives a characteristic salt and vinegar flavour. Capers go with lemon, wine, fresh herbs and provide flavour for sauces such as tartar sauce; as a condiment for seafood dishes, or the spicy Italian pasta sauce know as “Puttansesca”. Caper berries are ideal served with antipasto.

Cheesy Corn Fritters

These fritters make a wonderful dish to serve as a light lunch or brunch and are especially good if you make them as smaller fritters to pass around with drinks.

Prep Time:10 minutes
Cook Time:12 minutes
Servings:Makes 12 +

Ingredients

¾ cup SR flour
½ cup milk
2 eggs
20g butter, melted
410g can GOLDEN CIRCLE Corn Kernels, drained
½ cup grated cheddar cheese
¼ cup grated parmesan
2 tbsp chopped chives
2 tsp olive oil
guacamole, sour cream and coriander, for serving

Directions

1. Place flour into a large bowl. Whisk together the milk, eggs and butter. Stir into flour until batter is smooth.

2. Add the GOLDEN CIRCLE corn, both cheeses and chives. Season well and mix.

3. Heat oil in a large non-stick frying pan over medium heat. Add spoonfuls of mixture to pan and cook for 2 minutes each side until golden. Drain on paper towel. Serve warm topped with guacamole, sour cream and coriander.
