Red Curry Chicken Wraps

Wrap up the flavours of a delicous Thai red chicken curry in this lunch treat for two. Finished with fresh herbs, this really is simple food made special.

Ingredients

  • 2 slices wholemeal mountain bread
  • 2 large Cos or Butter lettuce leaves
  • 85g can HEINZ Shredded Chicken in Red Curry
  • ½ red capsicum, seeds & membrane removed, finely sliced
  • ½ lebanese cucumber, finely sliced
  • ¼ cup coriander leaves
  • ¼ cup mint leaves

Directions

  1. Lay 1 slice of mountain bread onto a clean work surface.  Top one half of the bread with a lettuce leaf, followed by half of the remaining ingredients. Repeat to make the other wrap.   
  2. To secure each wrap, fold in the edges, then starting from the filled edge, roll tightly until all the filling is enclosed. Cut each wrap in half for serving.
