Bean Samosas

Spice up your next get together with this popular Indian snack. For a cooling accompaniment, serve these golden pasties with a bowl of yoghurt, cucumber and mint dipping sauce.

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, diced
  • 1 medium potato, diced
  • 1 green capsicum, diced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 420g can HEINZ Baked Beanz in Sweet Chilli, drained
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp curry powder
  • 1/2 - 3/4 cup water
  • 3 sheets puff pastry, thawed slightly 
  • vegetable oil, for frying

Directions

1. Heat oil in a large pan and cook the onion, potato, capsicum, carrot and celery until tender. Add HEINZ baked beanz. Cook for a further 2 minutes.
2. Add spices and add water. Mix well. Reduce heat and simmer gently until the vegetables are tender. Remove from heat and allow to cool.
3. Cut pastry into 10cm circles. Spoon a small amount of vegetable mix onto one half of the circle. Fold over and seal edges with a little water. Press fork around edges to seal.
4. Fry gently in oil until golden brown. Drain on absorbent paper.
5. Serve immediately, accompanied by cucumber raita or relish.


HINT: 

Alternately bake the Samosas in a hot oven (210ยบC) for 10-15 minutes.                       

Try adding some freshly chopped herbs (mint, coriander or parsley) to your samosa mixture.
