Tomato paste – cooking
Browning tomato paste for casseroles, soups and pies adds a real depth of flavour and more intense colour. Stir the paste all the time over a moderate heat so that it browns rather than burns. It also acts as a thickener, eliminating the need to add extra flour.

Mini Baked Bean Muffins

These scrummy little treats, with the goodness of beans are the perfect tasty snack to fill those little tummies.

Servings:Makes 24+

Ingredients

  • 2 tsps olive oil
  • 2 spring onions, finely sliced
  • 2 rashers bacon, finely chopped
  • ¼ small red capsicum, finely diced
  • 1 ¼ cups self raising flour, sifted
  • ½ cup milk
  • 1 egg, lightly beaten
  • 45g butter, melted
  • 220g can HEINZ Baked Beans in Tomato Sauce
  • ½ cup grated tasty cheese

 


Directions

1. Preheat oven to 180ºC. Heat the oil in a small saucepan, add the spring onion, bacon and capsicum and cook for 2 minutes, or until the vegetables have softened. Remove from heat, drain on absorbent paper and allow to cool.
2. Sift the flour into a large bowl. Make a well in the centre. Gradually pour in the milk, egg and butter while mixing gently.
3. Fold in the vegetable and bacon mixture, HEINZ Baked Beans and cheese, until just combined. Spoon into a lightly greased mini muffin tin. Bake for 12-15 minutes, or until set and golden. Cool on a cake rack.


HINT: For a flavoursome kick, try adding some Tabasco sauce or finely chopped fresh herbs such as parsley, basil or oregano.
