Filo pastry
When cooking with Filo pastry, work with one sheet at a time, keeping the remaining sheets under a lightly damp cloth or clean tea towel. Filo sheets will dry out quickly if left uncovered, so will make them brittle and break when you go to roll them.

Tasty Tuna Baked Potatoes

Baked Potatoes-a family favourite. Serve with a fresh garden salad for a deliciously tasty lunch or light dinner.

Ingredients

  • 2 large potatoes
  • 95g can GREENSEAS Tuna - Sundried Tomato & Basil
  • ¼ cup light sour cream
  • 2 tbsps grated parmesan cheese
  • ½ cup grated tasty cheese
  • fresh herbs (basil or parsley), to garnish



Directions

  1. Preheat oven to 200ºC. Pierce each potato several times with a fork. Place on a lined oven tray and bake for 1 hour, or until tender.
  2. Cut potatoes in half lengthwise. Scoop out the flesh and mash until smooth, (retaining the potato skins). Mix in the GREENSEAS Tuna, sour cream, parmesan cheese and ¼  cup of grated tasty cheese. Season to taste.
  3. Fill potato skins with the tuna mixture and top with remaining grated tasty cheese. Bake a further 4-5 minutes until golden brown. Serve garnished with fresh herbs.
