Ingredients
- 2 large potatoes
- 95g can GREENSEAS Tuna - Sundried Tomato & Basil
- ¼ cup light sour cream
- 2 tbsps grated parmesan cheese
- ½ cup grated tasty cheese
- fresh herbs (basil or parsley), to garnish
Directions
- Preheat oven to 200ºC. Pierce each potato several times with a fork. Place on a lined oven tray and bake for 1 hour, or until tender.
- Cut potatoes in half lengthwise. Scoop out the flesh and mash until smooth, (retaining the potato skins). Mix in the GREENSEAS Tuna, sour cream, parmesan cheese and ¼ cup of grated tasty cheese. Season to taste.
- Fill potato skins with the tuna mixture and top with remaining grated tasty cheese. Bake a further 4-5 minutes until golden brown. Serve garnished with fresh herbs.
