Spanish Style Baked Eggs Share Print Overview Prep Time : Cooking time : Serves : 2 Ingredients Ingredients required: 420g Beanz Creationz™ Spanish Style Beanz flavoured with Chorizo 50g baby spinach 2 eggs Freshly ground pepper and salt, to taste 1 tbsp grated cheese ¼ bunch chives, finely chopped 4 slices chunky buttered bread or toast Method Method; Heat Beanz Creationz™ Spanish Style Beanz flavoured with Chorizo until hot. Add baby spinach leaves and stir through. Divide Beanz between 2 x 1 cup capacity greased ovenproof shallow dishes or ramekins. Form an indentation in the centre of each pile and crack an egg into each ramekin. Season with freshly ground pepper and salt and sprinkle with grated cheese. Cover with foil and bake in a preheated oven at 180ºC for 10 minutes. Remove foil and continue cooking for a further 3-5 minutes. Serve ramekins on a plate with chunky bread and sprinkle egg with chives.
