Ingredients required:

  • 500g lean beef mince
  • ½ cup fresh breadcrumbs
  • 1 tbsp chopped parsley
  • 1 tbsp chopped oregano
  • 1 egg, lightly beaten
  • freshly ground pepper and salt, to taste
  • Oil
  • Cooked pasta
  • Greek yoghurt

  • 1 large clove garlic, finely chopped
  • 1 onion, diced
  • 420g can Beanz Creationz™ Mediterranean Style Beanz
  • 250ml water or beef stock
  • ¼ cup tomato paste
  • Squeeze of lemon
Method

Method;

  1. Combine beef mince, breadcrumbs, herbs and egg and season to taste. Roll into small balls.
  2. Heat oil in a large frying pan (with a lid) and brown the meatballs. Set aside on absorbent paper. Add garlic and onion, cook for 1 minute. Stir in Beanz Creationz™ Mediterranean Style Beanz, water, tomato paste and lemon juice. Season to taste. Cover and simmer for 20 minutes.
  3. To serve, pour meatballs on top of cooked pasta, top with Greek yoghurt and sprinkle with extra chopped parsley.
