Quick Tip

Sugar
Granulated or A1 sugar is the common white table sugar with various uses, while caster (superfine) sugar is best suited for baking, as it dissolves and cuts through fat faster; when creaming butter and sugar for instance. Icing (confectioners or powdered) sugar is used less in baking, and is most commonly used for decorating. Brown sugar is simply white sugar combined with molasses syrup; the darker in colour, the richer the flavour. This is not to be confused with raw sugar, which is the refined sugar that remains after sugarcane has been processed.
